torrey pines gin
THE GIN OF DEL MAR.
official gin of the Del Mar Thoroughbred Club
Torrey Pines Gin is proud to be the Official Gin of the Del Mar Thoroughbred Club and the featured spirit behind the Torrey Pines Trifecta cocktail, served throughout the track during the racing season. Crafted in San Diego with California-grown wheat and botanicals from the Torrey Pine, it offers a distinctly local take on classic gin.
THE STORY BEHIND TPG
The seed of this gin was planted far from home, under the wide canopy of a massive pine tree on a hillside above Nice, France.
Owner and head distiller, Matt “Woody” Kidd was resting with his family on a bench after a morning hike, shaded by a towering pine. The ground beneath us was blanketed with needles and cones. One of our sons (knowing my love for crafting gin from the ground up) looked over and asked, “Could you make a gin from these?”
“Yes,” I told him. “Pine needles, pine cones, nuts — all of it could be used, alongside juniper, to make a gin.”
He thought on it, then returned with a single bundle of needles in his hand. “What about the Torrey Pines at home?”
And there it was, the spark that started it all.
HOW WE SOURCE
We take extra careful steps and considerations when sourcing our pine needles from this rare tree.
Torrey Pines Gin is made with trimmings collected by a licensed arborist from Torrey pines growing outside the Torrey Pines State Natural Reserve, on private and municipal land, during routine tree care. No material is ever collected from the reserve or from protected parkland.
These fragrant, sun-weathered branches are deconstructed by hand and steam-distilled to draw out their citrusy resin character. They are combined with toasted pine nuts, local chaparral, and coastal herbs. Every drop reflects the landscape that it came from.
WHAT MAKES IT UNIQUE
Each needle on a Torrey Pine is three-sided, with one side fluted like a gutter, designed by nature to trap and condense fog into precious water. This brilliant adaptation allows the tree to survive along the dry, windswept coast of Torrey Pines (San Diego) and Santa Rosa.
